All "True" Tea Comes from the Same Plant

Surprisingly, every “real” tea — from green to black to oolong — comes from the same evergreen shrub: Camellia sinensis.
What makes each type different isn’t the plant, but how the leaves are processed after picking.
Once plucked, the leaves begin to oxidize — similar to how a sliced apple slowly turns brown. How (and when) this process is stopped creates completely different flavours, colours, and aromas.

Green Tea – Fresh, Bright, and Cooling

Green tea is the least processed of all true teas. The leaves are quickly heated after harvest to stop oxidation, preserving their vibrant green colour and grassy aroma.
Depending on where it’s grown, green tea can taste light and floral (like Chinese bi luo chun) or deep and savoury with umami (like Japanese sencha or gyokuro).
Green tea is rich in antioxidants and L-theanine, an amino acid that promotes calm focus — making it a lovely choice for mornings or mindful breaks.

Black tea is fully oxidized, giving it that rich amber colour and signature depth. The process enhances flavours of malt, fruit, or even chocolate — perfect for pairing with milk, honey, or a quiet afternoon.
Chinese styles like Keemun are soft and aromatic, while Indian teas like Assam or Darjeeling tend to be brisk and strong.

Oolong Tea – The Art of In-Between

Oolong sits beautifully between green and black tea — partially oxidized and endlessly complex.
Light oolongs like Baozhong are floral and silky, while roasted ones like Tieguanyin or Wuyi Rock Tea carry deeper, nutty notes. No two oolongs taste the same, which is part of the magic.

Not all teas come from the Camellia sinensis plant — herbal teas (or tisanes) are made from flowers, fruits, and herbs.
